Easy chicken salad

Ingredients
- 4 chicken breast fillets
- 3 tablespoons extra virgin olive oil
- 150g green beans
- 250g cherry tomatoes, halved
- 1 large avocado, sliced
- 1 red onion, finely sliced
- 16 small black olives
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to hot 220°C (425°F/Gas 7). Brush the chicken with 1 tablespoon of the oil and place on a lined oven tray. Cover with foil and bake for 15-20 minutes, or until just cooked. Transfer to a plate and cover loosely with paper towels. Leave to cool but do not refrigerate.
- Bring a saucepan of water to boil and cook the beans for 3-4 minutes, or until tender. Drain. Plunge into iced water and drain.
- Cut the chicken not diagonal into 1 cm slices. Arrange the beans on a serving dish, or individual serving dish, and top with the chicken, tomato, avocado, onion, and olives.
- In a small bowl, whisk the remaining oil and lemon juice and season to taste. Drizzle over the salad and serve immediately.
