There’s something about cooking outside that makes even a simple meal feel special. But when the fish on your plate was swimming in the lake just a few hours earlier, it’s hard to beat.

I spent the afternoon by the water, enjoying the sun and doing a little fishing. After a while, I finally pulled in a beautiful bass. Nothing enormous, but definitely big enough for dinner.
And I already knew exactly what I wanted to do with it: straight onto the grill.
Catching Dinner
Fishing is one of those things where you never really know how the day is going to go. Sometimes you sit there forever without much happening. Other days, everything lines up perfectly.
This one was somewhere in between.
After waiting for a while, I finally felt that unmistakable pull on the line. A few moments later, I had dinner in my hand.
There’s a completely different feeling when you catch your own food. You appreciate the meal a little more because you were part of the whole process from beginning to end.

Keeping the Seasoning Simple
Fresh fish really doesn’t need much.
I didn’t want to cover the flavor with a heavy sauce, so I kept everything basic:
- Fresh fish
- Olive oil
- Salt
- Black pepper
- Garlic
- Dried herbs
- Fresh lemon
After cleaning the fish, I lightly coated it with olive oil and seasoned it inside and out.
I also added a few lemon slices while it cooked. The citrus mixed with the smoke from the fire and smelled incredible.
Cooking It Over the Fire
Instead of using a regular kitchen grill, we cooked it right beside the lake over a small open fire.
That might have been my favorite part.
No fancy setup. Just a grill grate, some rocks around the fire, good weather and the lake in the background.

I let the fish cook slowly, flipping it carefully once the first side had developed a nice char.
Depending on the size of your fish and the heat of the fire, cooking time will vary. The easiest way to know it’s ready is when the meat becomes opaque and flakes easily with a fork.
The skin got slightly crispy while the inside stayed tender and juicy.
Exactly what I wanted.
The First Bite

I added another squeeze of lemon before eating it.
And that was it.

It wasn’t a complicated recipe or an expensive dinner, but those are usually the meals I remember the most.
The fish was smoky, buttery and incredibly fresh, with just enough acidity from the lemon.
Honestly, it didn’t need anything else.
Easy Campfire Grilled Fish Recipe
Prep time: 10 minutes
Cook time: 10–15 minutes
Servings: 2
Ingredients
1 whole cleaned fish
1–2 tablespoons olive oil
Salt and black pepper
1 teaspoon garlic
1 teaspoon dried herbs
1 fresh lemon
Instructions
Pat the fish dry and coat both sides lightly with olive oil. Season generously with salt, pepper, garlic and herbs.
Heat your grill over medium-high heat.
Place the fish directly on the grate and let it cook without moving it too much. Flip carefully after about 5–7 minutes.
Cook the second side until the flesh flakes easily.
Finish with plenty of fresh lemon juice and serve immediately.
Sometimes Simple Is Better
I love trying new recipes, but days like this remind me that food doesn’t always need to be complicated.
Fresh ingredients, a fire and a beautiful place to enjoy it can be more than enough.
And catching dinner yourself?
That just makes it taste even better.
