Ingredients
  

  • 1 cos lettuce, torn into pieces
  • 250g smoked chicken breast, thinly sliced
  • 1 cup (250 g) whole-egg mayonnaise
  • 4 anchovy fillets, drained, chopped, reserving
  • 1 teaspoon oil
  • 2 cloves garlic, crushed
  • 2 tablespoons lemon juice
  • 2/3 cup (65 g) shaved Parmesan
  • ¾ cup (25g) ready-made croutons

Instructions
 

  • Place the lettuce and chicken on four individual plates or on a large serving bowl.
  • To make the dressing, combine the mayonnaise, anchovies, and anchovy oil. Garlic, lemon juice, 15 g of the shaved Parmesan, and freshly ground black pepper in a food processor and process until smooth.
  • Drizzle the dressing over the salad. Scatter with the croutons and remaining shaved Parmesan and serve.
