Smoked Chicken Caesar Salad

Equipment
- A large serving bowl
- Black paper grinder
Ingredients
- 1 cos lettuce, torn into pieces
- 250g smoked chicken breast, thinly sliced
- 1 cup (250 g) whole-egg mayonnaise
- 4 anchovy fillets, drained, chopped, reserving
- 1 teaspoon oil
- 2 cloves garlic, crushed
- 2 tablespoons lemon juice
- 2/3 cup (65 g) shaved Parmesan
- ¾ cup (25g) ready-made croutons
Instructions
- Place the lettuce and chicken on four individual plates or on a large serving bowl.
- To make the dressing, combine the mayonnaise, anchovies, and anchovy oil. Garlic, lemon juice, 15 g of the shaved Parmesan, and freshly ground black pepper in a food processor and process until smooth.
- Drizzle the dressing over the salad. Scatter with the croutons and remaining shaved Parmesan and serve.
