Cajun Butter Steak Bites are tender cubes of New York strip seared hard in a hot skillet, then tossed in a spicy garlic Cajun butter and spooned over creamy parmesan mashed potatoes. It is a steakhouse dinner in about 30 minutes, made in one pan, and it went viral for good reason.

The trick to steak bites is a properly hot pan and not crowding it, so every cube gets a deep brown crust while the inside stays juicy and pink. Below you will find the timing for every doneness, the 2-minute Cajun butter, and how to make the mashed potatoes extra silky.

What makes these steak bites so good?

Cutting a steak into bite-sized cubes gives you far more surface area for browning than a whole steak, which means more crust and more flavor in every bite. They also cook in about 4 minutes, so dinner happens fast.

The Cajun butter does the rest. Softened butter mixed with Cajun seasoning, garlic and parsley melts into the hot pan and coats every piece in a spicy, glossy sauce — and the extra drips straight into the mashed potatoes underneath.

The most common mistake? Crowding the pan. Too many cubes at once drop the pan temperature, the meat releases liquid and it steams grey instead of searing brown. Cook in two batches and let the pan get smoking hot again in between.

Key ingredients and why they matter

Key Ingredient What To Use Why It Matters
Steak New York strip or sirloin, 1 inch thick Tender, well-marbled cuts that stay juicy when cooked fast. Avoid stew meat, which needs slow cooking.
Butter Unsalted, softened Lets you control the salt, since Cajun seasoning is already salty.
Cajun seasoning Store-bought or homemade Paprika, garlic, cayenne and herbs in one shake — the whole flavor of the dish.
Potatoes Yukon Gold Naturally buttery and creamy, so they mash smooth without turning gluey.
Parmesan Freshly grated Melts into the mash for a nutty, savory depth. Pre-grated can turn grainy.
High-heat oil Avocado or vegetable oil Handles the high heat needed for a fast sear without smoking too early.

Ingredients

  • For the mashed potatoes: 2 lb Yukon Gold potatoes, peeled and cubed
  • 4 tablespoons unsalted butter
  • 1/2 cup warm milk or half-and-half
  • 1/2 cup freshly grated parmesan
  • Salt and pepper, to taste
  • For the Cajun butter: 4 tablespoons unsalted butter, softened
  • 1 1/2 teaspoons Cajun seasoning
  • 2 cloves garlic, finely minced
  • 1 tablespoon chopped fresh parsley
  • For the steak: 1 1/2 lb New York strip or sirloin steak, cut into 1-inch cubes
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper
  • 1 tablespoon avocado or vegetable oil

Instructions

  1. Put the potatoes in a pot of cold salted water, bring to a boil and simmer until very tender, 15–18 minutes. Drain well, return to the pot and mash with the butter, warm milk and parmesan. Season with salt and pepper and keep warm.
  2. While the potatoes cook, mix the softened butter with the Cajun seasoning, garlic and parsley.
  3. Pat the steak cubes very dry with paper towels and toss with the Cajun seasoning, salt and pepper.
  4. Heat the oil in a cast iron skillet over high heat until it shimmers and just starts to smoke. Add half the steak in a single layer, leaving space between pieces.
  5. Sear without moving for about 2 minutes until a deep brown crust forms, then flip and cook 1–2 minutes more for medium-rare. Transfer to a plate and repeat with the rest of the steak.
  6. Turn the heat to low, return all the steak to the pan and add the Cajun butter. Toss for 30–60 seconds until the butter melts and coats every piece.
  7. Spoon the mashed potatoes onto plates, pile the steak bites on top and pour over the extra butter from the pan. Garnish with parsley and serve with roasted asparagus or a green salad.

Steak bite cooking times by doneness

For 1-inch cubes in a very hot cast iron pan, total time across both sides:

Doneness Total Sear Time Internal Temperature
Rare 2–3 minutes 120–125°F
Medium-rare 3–4 minutes 130–135°F
Medium 4–5 minutes 140–145°F
Medium-well 5–6 minutes 150–155°F

For food safety, the USDA recommends cooking beef steaks to 145°F followed by a 3-minute rest.

Common problems and how to fix them

Problem Likely Cause Easy Fix
Grey, steamed steak Pan not hot enough or overcrowded Preheat until smoking and cook in two batches.
Tough, chewy bites Wrong cut or overcooked Use strip or sirloin and pull them at medium-rare to medium.
Burnt garlic in the butter Butter added over high heat Lower the heat before adding the Cajun butter.
Too salty Salted butter plus Cajun seasoning Use unsalted butter and a low-sodium Cajun blend.
Gluey mashed potatoes Overmashed or used a blender Mash by hand or with a ricer, just until smooth.

Tips and variations

  • Make your own Cajun seasoning: 2 tsp paprika, 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp each oregano, thyme and cayenne, 1/2 tsp salt.
  • Add shrimp: Toss in 1/2 lb shrimp with the butter for surf and turf.
  • Lower carb: Serve over cauliflower mash or with roasted vegetables.
  • Air fryer: Cook seasoned cubes at 400°F for 7–9 minutes, shaking halfway, then toss with the Cajun butter.

Frequently Asked Questions

What is the best cut of steak for steak bites?

New York strip, sirloin and ribeye work best because they are tender and cook quickly. Avoid stew meat or chuck, which need long, slow cooking to become tender.

How long do you cook steak bites?

In a very hot skillet, 1-inch steak bites take about 3–4 minutes total for medium-rare: around 2 minutes on the first side and 1–2 minutes after flipping.

Can I make Cajun butter ahead?

Yes. Roll it into a log in plastic wrap and refrigerate for up to a week or freeze for 3 months. Slice off what you need.

What goes well with Cajun steak bites?

Parmesan mashed potatoes are classic, but they are also great with rice, roasted asparagus, green beans or a crisp Caesar salad.

How do I reheat leftover steak bites?

Warm them briefly in a hot skillet for 1–2 minutes so they don’t overcook. Microwaving tends to make them tough.
