Chicken and Mushroom soup

Ingredients
- 1 ½ tablespoons oil
- 2 teaspoons grated fresh ginger
- 4 spring onions, finely chopped
- 1 chicken breast fillet, cut into thin strips
- 100 g button mushrooms, sliced
- 410 g can chicken consomme
- 50 g instant noodles
- 3 teaspoons kecap manis
Instructions
- Heat the oil in a saucepan, add the ginger, spring onion, and chicken, and stir-fry over high heat for4-5 minutes, or until the chicken changes color. Add the mushrooms and cook for a further 1 minute.
- Add the consomme and 2 cups (500 ml) water and bring to a boil. Stir in the noodles, then reduce the heat and simmer for 3 minutes, or until the noodles are soft. Stir in the kecap manis and serve.
- Kecap Manis is a thick, sweet sauce. If unavailable, use soy sauce sweetened with a little soft brown sugar.
